Ingredients:
- 4 to 6 cups fermented corn dough (AdSey’s Nest corn dough works best!)
- Banana leaves or corn husks for wrapping
- Salt to taste
Preparation:
- In a large bowl, mix together and knead the fermented corn dough with your hands until it is thoroughly mixed and slightly stiffened. Divide the dough into three equal parts.
- In a large pot, cook one part of the fermented dough. Cook for about ten minutes, stirring constantly and vigorously just like you would make banku. Remove from heat. This half of the dough is called the “aflata”.
- Combine the aflata with the remaining uncooked dough. Mix well.
- Divide the mixture into serving-sized pieces. Wrap the pieces tightly in corn husks, leaves or foil.
- Place the wrapped balls in a large pot and cover with water.
- Cook the wrapped pieces for 30 to 60 mins, depending on their size and thickness. Set aside once it is ready.
- Serve with fried fish, pepper sauce/ AdSey’s Nest Delicious Shito, and sliced onions.
