Fante Kenkey

Ingredients

4 to 6 cups corn dough (AdSey’s Nest corn dough works best!),1 cup grated, Salt to taste, water, banana leaves for wrapping.

Preparation

  1. In a large bowl, mix together the corn dough and add salt to taste.
  2. Mix half of the corn dough with water and boil corn dough until half way cooked.
  3. Spread the dough in a big clean bowl and add the remaining raw corn dough using a wooden ladle.
  4. Mix thoroughly and mold into desirable pieces.
  5. Wrap the dough with the plantain leaves.
  6. Place some plantain leaves at the bottom of a big saucepan and arrange the wrapped dough nicely.
  7. Add enough water, cover and boil.
  8. Serve Fante kenkey with hot pepper, AdSey’s Nest Delicious Shito, stew or soup.
