Ingredients
4 to 6 cups corn dough (AdSey’s Nest corn dough works best!),1 cup grated, Salt to taste, water, banana leaves for wrapping.
Preparation
- In a large bowl, mix together the corn dough and add salt to taste.
- Mix half of the corn dough with water and boil corn dough until half way cooked.
- Spread the dough in a big clean bowl and add the remaining raw corn dough using a wooden ladle.
- Mix thoroughly and mold into desirable pieces.
- Wrap the dough with the plantain leaves.
- Place some plantain leaves at the bottom of a big saucepan and arrange the wrapped dough nicely.
- Add enough water, cover and boil.
- Serve Fante kenkey with hot pepper, AdSey’s Nest Delicious Shito, stew or soup.
