Ingredients
- 1 cup AdSey’s Nest corn dough
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt, 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
Preparation
- Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
- In a large bowl, mix together the AdSey’s Nest corn dough, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, vegetable oil, and eggs.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Divide the batter evenly among the muffin cups.
- Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
