Cornbread Muffins

Ingredients

  1. 1 cup AdSey’s Nest corn dough
  2. 1 cup all-purpose flour
  3. 1/4 cup granulated sugar
  4. 1 tablespoon baking powder
  5. 1/2 teaspoon salt, 1 cup milk
  6. 1/4 cup vegetable oil
  7. 2 large eggs

Preparation

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, mix together the AdSey’s Nest corn dough, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, and eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
