Banku

Banku is usually eaten with okro stew or soup but is very popular with grilled or fried fish and ground pepper/ sauce/ shito (spicy black pepper sauce). It can also be eaten with any type of soup or gravy. 

Ingredients:

  1. 2 cups corn dough (you can use AdSey’s Nest corn dough)
  2. 1 cup cassava dough
  3. Salt to taste
  4. Water

Preparation:

  1. In a large bowl, mix together AdSey’s Nest corn dough and cassava dough.
  2. Gradually add water while stirring until you achieve a smooth, thick consistency.
  3. Add salt to taste and mix well.
  4. Transfer the mixture to a saucepan and cook over medium heat, stirring continuously, until the mixture thickens and pulls away from the sides of the pan.
  5. Using a soup ladle or a small bowl, mold banku into balls. (You may use aluminium foil, clingfilm or banana leaves.
  6. Serve warm with your favorite soup/ stew/ sauce.
