Banku is usually eaten with okro stew or soup but is very popular with grilled or fried fish and ground pepper/ sauce/ shito (spicy black pepper sauce). It can also be eaten with any type of soup or gravy.
Ingredients:
- 2 cups corn dough (you can use AdSey’s Nest corn dough)
- 1 cup cassava dough
- Salt to taste
- Water
Preparation:
- In a large bowl, mix together AdSey’s Nest corn dough and cassava dough.
- Gradually add water while stirring until you achieve a smooth, thick consistency.
- Add salt to taste and mix well.
- Transfer the mixture to a saucepan and cook over medium heat, stirring continuously, until the mixture thickens and pulls away from the sides of the pan.
- Using a soup ladle or a small bowl, mold banku into balls. (You may use aluminium foil, clingfilm or banana leaves.
- Serve warm with your favorite soup/ stew/ sauce.
